Ryan's REZ-ipes food truck’s contribution to nacho culture features its Pulled Pork Nacho Platter as an interesting fusion of sweet BBQ sauce, crunchy coleslaw, savory pulled pork and dry seasonings.

The chips, the foundation of every plate of nachos, were slightly overdone; leading to a less-than-ideal texture and flavor. Though over done, the chips contained the proper vigor to sustain the tasty toppings they scoop. Additionally, despite finding the dry seasoning of the chips very good, it wasn't evenly applied, resulting in an inconsistent flavor profile throughout eating them.

These nachos did not feature any pico or guacamole, so the primary conveyer of flavor was a sweet BBQ sauce. While well-suited to the pulled pork, it was overly saccharine, overwhelming the savory factor. I think it could work properly if properly applied to the pork. It appears it was squirted on top creating concentrated pockets of sweetness. The same sauce would probably be sufficient if it was mixed with the pulled pork before it was put on the nachos. This would create a more even profile.

The addition of coleslaw as a topping was a novel idea, adding an interesting textural element to the dish. It also created an interesting visual experience.

The portion size of the Smoked Pulled Pork Nacho Platter was reasonable, feeding about 1-1.5 people. A nice feature of the plating was that it came with plenty of tin foil to avoid any messes.

One of Ryan's REZ-ipes food truck features is a lean towards the region’s Native American coronary theme. While these nachos were not conventional, they did not feature any Native elements. I think there is significant opportunity to crate a nacho dish that has a Native American spin to it that pushes the versatile nacho to interesting and new places.

Overall, while these nachos have some interesting elements, it falls short of our high expectations. The overdone chips and uneven seasoning application detract from the dish's overall taste and the overly sweet BBQ sauce is overwhelming at times. On the bright side, I think many of these issues could be solved with quality control. For these reasons, I would give the Smoked Pulled Pork Nacho Platter at Ryan's REZ-ipes food truck a 2.5 out of 5 chips with plenty of potential for more.
